Your 00 rundown is awesome XD;

And... well, UC is a classic. Start with the movie trilogy of Mobile Suit Gundam rather than the series; it really trims the fat and you avoid a bunch of QUALITY. Zeta would be next--again, up to you if you'd rather do movie trilogy or series, it's not as clear cut as with original MSG.

Then you can check out some of the OVAs... 08th MS Team and especially 0080: War in the Pocket (my personal favorite Gundam anything).

Hmmm. I do want to watch the whole UC series, specially the original, because I love the graphics (I do, seriously I do). I have no idea where to get my hands on good subbed versions though. Probably have to root around a little more.
